Tasting Notes
Vintage oak. A warm, golden amber that speaks to the STR cask maturation and the Tel Aviv climate.
Red apple, vanilla, candied orange peel and almonds. Fresh and welcoming with an unmistakably Mediterranean character.
Stewed apples and dark chocolate with a hint of orange. A warmth that builds gradually and wraps around the palate in a way that stays with you.
Medium to long. The fruit softens into something warm and slightly spiced. Clean and satisfying with a lingering sweetness.
The Story
Milk & Honey opened in 2014 as Israel's first whisky distillery, built in Tel Aviv with a simple ambition: to make world-class single malt in one of the most unexpected places on earth. What they have achieved since is extraordinary.
The climate in Tel Aviv ages whisky at a pace that Scotland cannot match. The hot summers and mild winters accelerate the interaction between spirit and wood, producing remarkable depth in a fraction of the time. This is not a shortcut. It is the terroir of a different part of the world expressing itself honestly.
The STR process involves shaving, toasting, and re-charring red wine barrels before filling. The result is a layer of fruit and warmth that gives this bottle a character unlike almost anything else we have bottled.
